History

Established in 2015.

Having known each other for over 20 years and lived in various places it seemed inevitable that we would one day start a business together. We wanted to breathe life into the food choices available in the Hills. Our grocery store provide fine chocolate, great quality food and flowers at honest prices. We’ve based it on the lovely shops you see in Europe. We miss them and so we made a slice of that in Baulkham Hills.

We pride ourselves on providing great service in a small and friendly shop. We sell lovely things that you probably won’t find in the supermarket, while at the same time we do not bamboozle you with endless choices.

I’m just one of 4 people behind Ruby’s.

Having lived in London for most of my life, I’ve got a somewhat unusual outlook on things, trying to use what I know to make things as good as they can be. I’ve worked on some curious things in my time, from the team that invented prepay phones to the project that was going to close down 1.2 gigawatts of the oldest dirtiest power stations in the UK.

Now I work primarily in research at a university. It’s one of the most rewarding things I’ve ever done: many places say they offer limitless potential but this is one place where it really is true and I see that every day.

Ruby’s is a dream to create a great shop without the extraordinary price tags that often go with shops. bwe wanted to create something that was truly and totally independent. We are not a franchise. We love what we do and we run a business because we are dedicated to that dream, to bring great food and great service to the Hills.
