Fast, Fresh, Hot & Healthy dim sum. Served straight from the bamboo basket it was cooked in.

History

Established in 2011.

Started as a small market stall that endeavours serve dumplings as fresh as possible, it evolved into the understanding that it should be cooked as soon as it is rolled and served straight from the basket.

This progressed into a fixed location in July 2012 where we could concentrate our research and continue to serve fresh from the basket.

Meet the Manager

Ming Xu X.

It was originally Kevin & David’s idea to serve fresh dumplings straight from the basket but as capacity grew, so did the complexity of recipes. Ming (Kevin’s mother) came as our knight in shining armour and proceed to promote herself from assistant, to boss in a rather short time.

She improved all the recipes and even created her own, ‘Zen’ (another story behind that). She showed us that rolling a dumpling took focus, speed and style. Rolling a consistent dumpling in 9 seconds flat. She gave us a series of fantastic ideas on quality control as well as waste management.

These ideas were:

1. Every dumpling is a work of art, created by sharp hands, wasting a dumpling is wasting life.

2. Never eat your own dumplings until you have made the first daily sale.

3. There is never such thing as a left-​over dumpling once steamed and cooled, it can be fried to another perfection!

Ming has returned to China but is always on hand to give advice when we need her
