These guys are like old-school butchers. They know what to do, they know how to cook it, they all look like salt-of-the-earth codgers(even the apprentices) and they always, always, do a fantastic job at serving you, friendly with a smile, a joke, and a welcome sharing of their expansive knowledge of all things meat. Craig Cook is the larger than life character of Australian Butchers(I remember him yodelling«Baby Face» at David Jones Food Hall when I used to work there) and his larger-than-life butcheries are pricey, but with good reason, because Mr Cook knows his meat, and he knows how to employ the right butchers, because these guys(as stated above) not only look the part, but they act the part, and they KNOW their parts(and joints, off-cuts and sausages). Always happy with these blokes, and the meat is always delicious, although I am a great cook, so I guess I have to take some credit for being able to turn their raw produce into something I love to eat.
