History
Established in 2011.
Ajitoya Japan’s Kitchen started in late 2011 and opened with only 3 dishes on the menu and 3 bar tables. The aim was to setup the first Japanese one stop shop in Melbourne’s West for sushi, groceries, meals and Japanese beer –specialising in Japanese craft beer.
The space has grown to include curb side seating, courtyard and an upstairs to be completed soon.
The growth is thanks to the support of the local community to which ajitoya has become a destination for locals for lunch or dinner.
Meet the Manager
Maya F.
Manager
Maya Fujihara is the General Manager/Owner of ajitoya and looks after everything in the shop from the Kitchen to the Bar and oversees the comfort and enjoyment of our valued customers.
A Japanese native, Maya speaks both Japanese and English fluently, is very well traveled and has held many impressive roles such as Branch Manager for Japan’s largest English School, opened her own new school concept and more recently worked at Izakaya Den.
Maya brings a wealth of knowledge to the shop and continues to grow and enhance the business guiding it towards our end vision — to provide authentic Japanese food and supplies in Melbourne’s West.
