An extension of the polished environment of The Hotel, yet a place with a mind of its own, The Restaurant offers a new take on fine dining. Culinary Director Pierre Balthazar invited three international guest chefs to propose their interpretations of the same basic ingredients, creating a menu that offers a variety of dishes showcasing the authenticity and originality of the chefs’ different personalities and backgrounds.
Enjoy the sweeping views of the Parc d’Egmont, discover artful installations in the showcase cubes devoted to fashion and art, or take a seat at the Chef’s table for a front row seat to the spectacle in the open kitchen.
History
Established in 2013.
Pierre Balthazar, the current Culinary Director at The Hotel, has created a unique concept in its genre for The Restaurant
from his long professional experience within the Council of Europe. This concept represents a journey full of impressive
international encounters and an empathic curiosity that is constantly alert; all qualities belonging to the obviously dynamic
chef that is Pierre Balthazar.
