Our name is derived from the Black Iberian Pig, commonly found in southern Spain and Portugal. The distinguished flavour is a result of roaming freely in pastures and oak groves where they feed naturally on grass, olives and acorns. Also known as Pata Negra, with its perfected curing process, it is widely considered the cream of Spanish ham and is prized both for its smooth texture and rich, savoury taste.

Alison began her restaurant career at the age of 14 and completed the Professional Cooking Red Seal Diploma Program (Obtained red seal) in January 2011. Since obtaining her red seal, Alison’s accomplishments include opening and operating a fine dining restaurant for the award winning Teatro Group under the direction and guidance of Calgary’s Best Chef (2013).
