Established in 1997.
New ideas and great products by themselves do not guarantee success. Today, consumers have higher expectations of quality, taste and value. Richard’s vision was to share his new products and ideas with consumers, to exceed their expectations and to win their taste buds. After approaching Sun Life property management with extensive market research and a strong business plan, an invitation was given to visit the «Test Kitchen» in Richard’s garage. They too were impressed with the concept.
Coco Brooks opened its first location in a light industrial area. With a different approach to marketing and a unique menu, people started to say great things about Coco Brooks and its pizzas. The next two years were spent perfecting recipes, improving systems, raising standards, detailing operations and developing the Coco Brooks brand. When the second location opened, its sales grew to that of the first store in just over a year.

In 1997, Richard Osiowy and his family moved to Calgary. Being fans of pizza, they were unable to find a quality pizza with which they were happy; a pizza with a good crust and plentiful, quality toppings. He started to research new ideas for pizzas and discussed them with people in the pizza industry in Canada and the United States. Richard then decided to set up a «Test Kitchen» in his garage developing recipes and testing the new flavours of pizza on friends and neighbors. Everyone was impressed! Richard felt that to make a great pizza, the crust had to be thick, light and crisp, using the best tomato sauce, quality meats, fresh crisp vegetables and a good portion of mozzarella. New, unique flavours were created: Egg ‘n Bacon Pizza, No Cheese Veggie Pizza, Louisiana Chicken Pizza, Banana Bread Pizza and Pizza Fruta. These flavours appeal to the changing tastes of consumers … not to forget the pizza lovers who are happy with traditional pizzas such as Pepperoni, Hawaiian or Cheese.
