Brioche opened its doors in Gastown circa 2003 with Italian owner and Head Chef Eduardo Bilardello. Meet the Business Owner

Eduardo B.

Business Owner

Head chef and owner Eduardo Bilardello began his culinary career in Sicily over 25 years ago. His Italian/West Coast style always amazes even the most particular of clients. The focus is on freshness, quality, and above all, flavour. And it can’t go without saying that Eduardo wouldn’t make you something to eat that Mama Pina in Palermo wouldn’t approve of!

He has an impressive resume that includes faculty membership at Italian and French cooking schools, Standfords Executive of the Year Award and local recognition as a teacher and community member.
