History
Established in 1998.
The Copper Chimney Restaurant & Bar is one of Vancouver’s premier restaurant and lounge experiences offering contemporary Indian inspired west coast cuisine within a stunning room that combines rich vibrant colours, exotic millwork, Murano glass chandeliers and floor to ceiling painted murals. Located in the Hotel Le Soleil, in the heart of Vancouver’s entertainment and financial districts, the executive chef and his talented team will prepare dishes combining the freshest of seasonal ingredients with exotic spices, delivering memorable tastes of some of India’s finest flavours. The open-styled kitchen with its copper chimney and oven takes centre stage, complimented by high vaulted ceilings, spiral staircase and balcony dining. Private dining tables, an exquisite cocktail bar and live music on Friday nights, create a lively night scene in the heart of Vancouver.
Meet the Manager
Stephen A.
Manager
Growing up on the East coast, Stephen had always had his sights set travel, tourism and hospitality. He attended Cape Breton University’s Faculty of Business, while beginning his first foray into hotel operations with a job as a lounge supervisor with a resort in Ingonish, NS. When he graduated in 2002 with a specialization in Tourism Marketing and Management, he decided to pursue his dream and headed west where he found himself at the iconic Château in Lake Louise. Over the next four years he continued to gain experience as well as taking time to do some globe hoping with trips to Australia, across Canada and into the US. Then in 2008, he had exchange the mountain lake setting for the ocean with a move to a Relais & Château property in Vancouver. He moved into a managerial position as banquet manager and subsequently to a restaurant manager during his four years at the property. In November 2012, he joined Executive Hotel Le Soleil as The Food & Beverage Manager.
