Every once in a while, after Saturday night dinner service ends, the chefs at Noma get together and cook. This is not for the restaurant exclusively, it’s about creativity. It’s an expression of ideas and to get the feedback of your peers and the higher chefs at Noma. We luckily got to come back in the wee hours to experience the process as observers to see how ideas, concepts, and techniques are explored outside the massive hours already put into a service. It was also chef Tom’s last service and we also got to see him being sent off by his crew.
