Wonderful restaurant, absolutely perfect for late night, may be special occasion. We had the best time! Among the notable things — amazing wine pairing!!! We really enjoyed talking to sommeliers, who despite being very young were true masters of their trade. The restaurant mainly serves americans though, I don’t know if that’s good or bad, just the way it is. I would recommend this place

It was honestly a great meal, but for the exorbitant price, we can’t quite give this place a 5 star rating. Starting off our 6 course meal was a ceviche-esque appetizer. It paired well with the bread. Next up was a raw fish in a carrot sauce. Next was a lobster bisque that was quite delicious and helped clear our palate before the main meal… duck. The duck breasts were grilled surrounded by a thin pork cover. Wow. These were the most tender duck breasts imaginable. Think filet mignon but with duck. Unfortunately there were only two per person, but the duck legs served simultaneously still filled you up. Finally, the meal concluded with a triple dessert: rhubarb pie, lemon sorbet, and strawberries romanoff. Each was quite tasty(each member of our party enjoyed different desserts the most), and provided an excellent finish to our 2.5 hr meal. Get reservations early! We were incredibly lucky to get reservations the day of, even though our meal had to start at 10:30 pm. Everyone we talked to including the staff noted it. Plan for this meal days/weeks in advance and you’re much more likely to get the reservation you want.

We were here in December 2015. Can’t say enough good things about our experience here. We had the chef’s menu and wine pairing. Service was excellent in that we always had want we wanted and didn’t really notice the wait staff taking care of everything. Seating is intimate and you can expect to be close to others on a busy night but it’s comfortable. Open kitchen is fun to watch if that’s your thing. Presentation and taste both excellent. It’s pricy, but if you’re looking for a restaurant with only one or two nights in Paris, would put Spring on your list to check out. Definitely in the top 5 dinner experiences my wife and I have had.

I can’t believe I forgot to review Spring. We were lucky enough to able to make reservations about a week out from our trip. We are HUGE fans of prix fixe menus. It forces us to try things and expand our palates into somethings that we might not normally try. We enjoyed each course with some great wines. Everything was fantastic. The service was impeccable, everyone we encountered was amazing. Spring is located in a sort of nondescript area. There is a small sign above the door so keep an eye out. :)

I ate at Spring in November, and had a really great meal with my parents. We had an amazing table, right next to the kitchen, so got to watch the chefs prepare the food as we ate. We booked ages in advance to get a table, but unfortunately we went in November right after the attacks and the restaurant was very empty, which was so sad to see. We talked to chef Daniel Rose, and he told us how much the businesses in Paris, especially restaurants such as Spring, had been affected. It was great to be able to speak to him about his restaurants in Paris, as well as his upcoming venture in New York. The food was really good, and the wine was good too. We had a series of courses, with quite generous portions. You won’t leave hungry. The only thing I would have changed was a bit less emphasis on the seafood for my meal. I told them in advance that I am vegetarian, but eat fish(eating fish is important I’ve found in Paris, some places can’t or won’t accommodate if you don’t eat seafood), and each of my courses was seafood-based. It would have been nice to have had some veggie courses. Maybe next time I would just say I’m completely vegetarian and skip the fish altogether, although my main course fish(with an INCREDIBLE side of gratin-style potatoes) was delicious.

We spent a week in Paris in late September, and had the pleasure of eating at Spring. I reserved two months in advance. All very efficient using email. We loved it. Beautiful layout, open kitchen. Friendly, welcoming staff. Delicious and well balanced menu, splendid wine pairing. Nice vibe. Great value(spend time in Paris and find better value for a meal, ha ha ha). We travel and are not new to the game. Spring is a very nice place to converse and enjoy a well prepared and devised meal. Highly recommended.

Amazing! Chef Daniel Rose has created a warm and welcoming atmosphere with a killer menu. For those finicky diners like me(no red meat, no snails, no oysters), the staff is happy to accommodate. Everything was delicious. My husband had everything on menu and enjoyed every bite. My substitutions, when requested, were outstanding. Dessert(s) came out when we thought there was no more room. The chocolate Christmas Roll was outrageous! Chef told us he is opening a new restaurant in Manhattan in the Little Italy/Chinatown area called Chez Willie. It will open Spring 2016. We hope to be there opening night!

I had really high expectations for Spring based on everything I read. I was severely underwhelmed with my experience. Firstly — the service and the staff should get 5 stars. They were truly wonderful and if the food had been better, the review would be higher. We started off with a Haddock soup that was really bland. It was lacking a lot of flavor. We then had a scallop appetizer with apples and caviar. This was quite delightful. Next was a fish stew/soup as one of the first courses. The stock was incredibly fishy in taste. I thought the fishy/seaweed stock was too overpowering to enjoy the taste of the fish. The main course was prepared rabbit tenderloin which was very well done. In addition to this was a rabbit stew with fois gras. This had an overpowering gamey taste and left a very strange aftertaste in your mouth. I could only have a couple bites of it… not enjoyable. The desserts were maybe the best part, with a sorbet, a goat cheese something that was delightful, and a chocolate Carmel tart. The tart was ok but nothing that blew my mind. We ended with a candy tasting that was tough and not very flavorful. After reading everything about Spring, I was hoping to have flavored that would be bold and develop across the course of the meal. I wanted to take a taste and be blown away with creativity and flavor. I left feeling pretty let down. I will not be going back.

Amazing! We didn’t have a reservation and the place was quite full, but the super-friendly staff did everything to find us a table. We only had to wait about 5 – 10 minute until they sat us down at a nice table on the underground floor. It looked like a cave and the ambient was very nice. The staff was extremely friendly and they were having a lot of fun serving the guests. The food was exceptional! Everything looked and tasted amazing! We had a really good time there, a lot of fun and I will definitely go there again if I’m ever going back to Paris.

Fantastic! If you love new food driven restaurants this is the location for you! We didn’t have a reservation however they were more than accommodating to help us find a seat. We were able to sit at the bar downstairs and engage with the staff — and as dinner is ‘entertainment’ here, we certainly enjoyed the ambiance. The food was on par to that of a Michelin 1 star/rosette restaurant quite easily. We were fortunate enough to obtain a table once others had finished so that we could enjoy dinner upstairs(ie ground floor). There we enjoyed our dessert and another ‘level’ of service. Attentive. Accommodating(to a vegetarian). Absolutely amazing. Merci Spring. Keep doing what you’re doing.

Superb! This restaurant deserves one or two Michelin stars. We ate at Frenchie yesterday and Spring is an order of magnitude more wonderful. Every dish was a delight. One of my favorites was a dish of lobster and tomatoes. I’ll post a photo. There was a wondrous pintade, accompanied by a magical fois gras dish. The dessert of many parts was also wondrous. Last time in Paris I ate at Les Bouquinistes which has a star and Spring was better. I see that there are some negative reviews from recent diners. I just can’t square what they say with what I ate. We were upstairs in the dining room that is part of the open kitchen but the downstairs dining room also seems nice.

This was one of my worst dining experiences in Paris(and I have been coming here for over 20 years). I love good food but Spring was just not good(and my two well-traveled dining companions agreed). I also like to «push myself» from time to time as to what«good» really means, but again Spring fell short of the mark. We had smoked eel with 2 slivers of Foie Gras, mackerel, A slow cooked egg in white wine broth(tasty, but salty), veal with an huge portion of sweetbreads and new potatoes, and homemade ice cream(good) and clafoutis(too eggy) for dessert. We also decided to get the wine pairing(horrible) and the cheese addition(good). Normally, I don’t complain about price but for 144EUR I should leave there thinking«wow, I want to eat there again»…instead I left thinking«I can’t wait to write this Unilocal review.» For context, so you know I am not some crazy reviewer, I am from San Francisco and have been to all of the so-called hot spots there and like them. In Paris, I have been to Le Chateaubriand, Septime and Bones and liked them all. Spring is just overrated. I am with Constance E who dined there 3 nights ago calling it a huge disappointed. People who give this place high marks must do so because they think they are supposed to like it, like folks who say an artsy movie is great because they assume they just didn’t understand it and can’t review it poorly. Well, I am not one of those. It sucked, don’t go.

We had a beautiful starter with mackerel in a lime and coriander sauce. This dish was followed by a beautiful and aromatic mushroom and egg dish. The bread was good and the butter to the bread was delicious. All that said I am disappointed, I so wished this restaurant had delivered better. One of our wine glasses had a ring of water around the edge, the staff spilled both water and wine at the table without cleanIng it up, the plate the main dish was served on was hot as h**ll and we received no warning of this. The main dish was poor, tasteless fish and the grapefruit and olive tapenade was overwhelming for my tastebuds(really good potatoes though). The desert was delicious and down to earth. We had the tasting menu at 84eur. Compared to other resturant we been to in Paris the value that you receive for your money is not great(in a similar price range we had much better total dining experience in akrame, sola and passage 53). The staff is really friendly and smiled a lot and when we pointed out that the check we received was faulty they fixed their mistake and gave us a glass of wine each, nice way to handle the situation but it did not make up for all the small mistakes that spoiled the overall experience.

Fantastic tasting menu! The restaurant is tucked away in a little alley not far from the Louvre and easily accessible from a subway stop. We had heard great things from our friend that visits Paris frequently, so we had to give it a try. The price is very reasonable, especially given the quality of the food. Apricot Juice — I know this is bottled and is probably easily purchased in stores in Paris, but this was the best juice I have ever had in my life, it was delightfully tart with a touch of sweetness. Cucumber Soup — it was cold, which surprised me, but the flavors were nice and was a nice way of starting the meal Melon and Beef — I could have eaten this all day! Foie Mousse — coming from LA, this was such a treat Tuna and Tomatoes — this was so refreshing and pleasing to the eye, the tuna slices looked like tomatoes and the flavor combination was pure perfection Burrata — the hubby loves burrata cheese so he was really happy with this, the flavor was light and clean Duck and Figs — I love that they gave you a beautifully plated piece of duck and fig and then brought you a pan full of duck! Most tasting menus only offer you a bite or two of each course, but this one really fills you up. The duck was cooked beautifully and the sauce was delectable. Fish — unfortunately I forgot what type of fish it was, but it was one of the best cooked fish I have had, the skin was crispy and the meat was delicate and flaky, not to mention the beautiful sauce it was sitting in Ice-cream with Blueberries — nice and simple Lavender with Apricot — very pretty, I wish this was a perfume Melon and Pea Purée — such an odd combination but it worked very nicely White Peach Tart — wow, this was probably the best dessert we had in Paris, so good! Definitely a must try!

Le Spring est un restaurant de haute cuisine française. Peut-être parce que le chef est américain, nous étions lors de notre repas les seuls français. On né choisit pas son menu cependant le staff prend soin de demander aux clients s’ils ont des allergies ou détestent particulièrement un certain aliment. Après cela le chef a carte blanche pour choisir son menu(qui change tous les jours), cinq plats environ pour 85 €(±). On peut demander à le découvrir à l’avance ou au fur et à mesure des plats. J’ai eu peur lors de la mise en bouche(quelques patates fumées, thon rouge cru et petite soupe à la moule), certes bonne mais qui né faisait pas preuve d’un génie particulier. Cependant le reste du repas était à la hauteur(bien que l’addition est tout de même un peu trop salée à mon goût). Nous avons eu, en vrac(et de mémoiré): –Mise en bouche –Homard breton avec une vinaigrette de carotte(et autre chose), tomates du jardin –Lotte avec aubergines grillées et sauce à l’olive noire –Pigeon avec salade de foie gras –Dessert avec tarte à la pêche, granité fraise et biscuit chocolaté Les légumes étaient d’excellente qualité et complémentaient toujours parfaitement le plat. Le homard et le pigeon étaient les deux plats les plus mémorables et surclassent de loin d’autres plats similaires mangés ailleurs. À réserver pour une occasion spéciale.

Spring, ressort cassé ? Il y a quelques années, lorsqu’il était encore implanté dans le 9eme arrondissement, il fallait faire preuve d’une incroyable patience pour dégoter une table chez Spring. Les délais sont maintenant beaucoup plus retreints et à entendre nos tables voisines, une part substantielle de la clientèle est composée d’américains, comme si les touristes venaient rendre hommage à l’un de leur compatriote puisque Daniel Rose, le Chef, vient de Chicago. Cela signifierait-il que l’adresse serait délaissée par les gastronomes parisiens? Le concept de menu surprise et imposé commence à me fatiguer mais bon, allons y pour une déclinaison limitée, ici, à 4 plats. Ok, c’est plutôt bon, les cuissons sont millimétrées mais ça manqué cruellement d’inventivité et parfois les associations tombent à plat. J’en veux pour exemple la sole accompagnée d’une sauce au foie gras et bouillon de volaille garni de poireaux frits, champignons de Paris et Kumquat. Certes, c’est terriblement tendance d’associer le terre et mer mais, dans le cas présent la sauce — plutôt bonne — prend le pas sur le goût du poisson et né reste plus de la sole au goût délicat que sa consistance… Service impeccable, à la fois attentionné sans être obséquieux mais Paris regorge d’adresses dans lesquelles on mange mieux pour moins cher(286 euros à 2 avec association mets/vins).

We went to Spring on a rainy night in Paris. You need to get let in by the host, which was a concern with all the rain and since they were just opening. We had no problem getting out of the rain, and as you probably know, rain is like acid to Southern Californians so we had to move quickly. :) We asked to move our table away from the window and closer to the open kitchen so we could see the action. We went with the tasting and wine pairing. Since the menu changes often I will not get into every detail but just know that this was the best meal we had on our entire trip through Paris, Barcelona, and Florence. One item that was over the top amazing was the veal foie with potatoes layered on top. On a cold night this was some awesome high end comfort food. The other aspect I loved was the well thought out wine pairings and the detailed explanations by the sommelier. I have found recently that many high restaurants are not pairing wines with the food as well as they seemed to do in the past. Is the menu changing too often? Is it the lack of effort? I’m not really sure, but at Spring it is worth the extra expense and beyond. The chef was kind enough to sign a pseudo menu for my wife since they technically do not have one. This meal was fantastic and it kicked off our trip with some really high expectations. See Paris, someone from the US can prepare outstanding food too!

Décevant Décevant par rapport au buzz fait autour de ce restaurant. Certes, il faut réserver longtemps à l’avance et la carte change tous les jours. C’est peut-être là que la barre est mise trop haute. Je n’ai pas trouvé de créativité. La sole frite était banale, le pigeon de mon amie n’avait rien d’exceptionnel. C’était bon, mais sans plus. Peut-être qu’une carte né changeant qu’une fois par semaine permettrait au chef de se ressourcer.

Pour ma visite au Spring, je n’avais pas tous les éléments. je viens d’apprendre que la soirée avait été prévue sous forme de cocktail dînatoire servi debout… Le chef a donc été un peu prix au dépourvu en apprenant que l’agence qui a géré l’événement l’a «vendu» a ses clients pour un repas à table. Il a eu l’élégance de faire comme si tout était normal, il a même prit la responsabilité d’un petit retard pour lequel il c’est excusé. L’ensemble de l’équipe a changé de plan sans que nous ressentions le moindre stresse ou énervement. Au final, je suis donc impressionné par l’audace, la compétence la gentillesse et surtout, plus rare, l’élégance de ces gens. Chapeau bas.

Original, délicieux et convivial Ce restaurant surprend de prime abord… Même la porte d’entrée, sorte de véranda artisanale d’atelier d’artiste ! Et pour le coup, c’est un véritable atelier d’art culinaire: tous les jours un menu différent, créatif, fait avec d’excellents produits, cuisiné de main de maître et bien présenté. Les vins né sont pas en reste: de petits producteurs de grande valeur, on peut d’ailleurs se procurer à la fin du repas les bouteilles qu’on a tant apprécié pendant. Une adresse à retenir, d’autant que le chef déménage bientôt pour un peu plus grand et plus complet: demandez-lui et notez la prochaine adresse, vous comprendrez pourquoi en sortant de cet endroit atypique et enchanteur. Mention spéciale à la déco des toilettes… vous avez dit Guide Michelin?

Excellent mais… Il faut dire que nous avons eu de la chance: j’appelle 6 jours avant, au hasard et paf, on me répond avec un charmant accent que c’est possible pour 4 personnes. Formidable! De toutes façons, quand on né connait pas et qu’on passé par hasard, on n’y rentre pas facilement, dans le resto de Dan! La porte est des plus mystérieuses… mais je vous laisse la surprise et de toutes façons, le maître des lieux viendra rapidement vous ouvrir! Côté cuisine, rien n’a dire, c’est fin, absolument délicieux, la surprise est totale. Le service«tout le monde en même temps» est très original(plus bobo, tu meurs!) mais que c’est long entre chaque plat! Le chef est passionné, c’est une évidence! Cependant, son extrême concentration(ou sa timidité?) est un frein à la communication de son art avec ses hôtes. Et c’est vraiment le principal reproche: on vous installe comme à la maison mais il reste cette barrière entre les convives et la cuisine… finalement, comme dans n’importe quel autre restaurant!

Si bon Daniel Rose sait ce que c’est que de se faire désirer. Nous habitons à 200 m de son minuscule resto et pour autant pas moyen d’en faire notre cantine. Depuis que la presse l’a encensé de sa critique, ses 16 couverts sont réservés des semaines à l’avance disons même des mois. En moyenne 2 à 3. Evidemment pas facile de satisfaire tout le monde lorsqu’on est ouvert que les soirs du lundi au vendredi et seulement le jeudi et vendredi midi. Le samedi, sachez-le, c’est private party. Alors le concept c’est simple, on réserve bien à l’avance, on se présente à 20h30 pétantes en même temps que le reste des convives et on attend la surprise du chef car c’est le concept, on né choisit pas ce qu’on mange, c’est le chef qui nous mange à sa sauce. La seule carte c’est celle du vin. Ce soir là: consommé d’écrevisse et sa tempura, déclinaison de thon simplement parfait beau et bon, un veau tendre et fondant comme je n’en avais jamais mangé et pour finir après le dessert, le chef nous remet avant de partir une«tranche de cake aux noix» absolument fantastique pour le petit déj du lendemain. Pour résumer, la créativité et la rareté des grands restaurant sans tout le chichi du service et surtout sans la note salée, avec les vins nous en avons eu pour une cinquantaine d’euros chacun. Pour info, dépêchez-vous, car il devrait ouvrir au printemps un nouveau restaurant d’une vingtaine de couverts derrière le Louvre, pour lequel il prend déjà les réservations !!

Un pur moment de bonheur Ahlala, le Spring fait parti des meilleures découvertes de l’année, a tel point qu’en 6 mois, c’est la 3eme fois que nous y allons diner. La cuisine de Daniel Rose est juste, les goûts s’emboitent à la perfection en bouche et là c’est l’explosion de saveurs!!! Le carte des vins est assez courte, mais avec choix judicieux dans une fourchette moyenne à haute(par rapport au prix du menu unique: 40 €). Le service est toujours sympathique et cosmopolite. Quant à Daniel derrière son plan de travail, il est appliqué et serieux. En fin de soirée, il passé entre les tables, afin de proposer un digestif… Un conseil: allez-y!!!

Bön Rookie à suivre Ce restaurant minuscule(max 16 couverts) est très difficile à réserver. Donc nous étions très contents d’enfin pouvoir y dîner. Concept dit-on«original«, mais pas vraiment si on a une connaissance de la culture culinaire du monde: Cuisine ouverte est courante et classique pour les Japonais. Très bon produit, cuisson parfait ainsi qu’assaisonnement. Mais pourtant un bémol: un plat«empruntés «de la cuisine japonaise(considéré «inventif«par la clientèle française ou américaine) était trop direct donc un peu d’inspiration créative svp. Le service peu attentionné(la serveuse without smile était loin d’aimable), mais pour le prix de très bon cost-performance, on né demande pas le service étoilé.

Cuisine La pintade rosée légèrement mentholée, en bouillon, avec ses poireaux gratinés «sont à tomber». Sans compter la poire Belle-Hélèné ! Accueil américain typique.
