There are a variety of ways to make noodles. You can pull the dough into strands, like ramen, or just roll it flat and cut it, like udon or extrude it by Italian pasta. Knife-shaved noodles or daoxiao mian(刀削面) is a specialty of Shanxi in Northern China, and is made by shaving thin, long pieces of noodle from a round of dough, just like you may peel a cucumber.(watch here: , ) This restaurant, Shanxi Knife Shaved Noodle King, needless to say, specializes in knife shaved noodle. In fact, I’d say that it’s much better than their ramen, so don’t stray from their specialty. The noodles have a firm, nice bounce. There are plenty of toppings to choose from, various cuts of beef, pork or chicken. The spicy mala toppings come on its own plate, but others are served in the bowl with the noodles. We also tried the fried xiao lung bao. I’ve only had it steamed before, so this is new for me, the dumplings are placed on top of an egg omelette. Interesting to try but I’ll stick to steamed ones in the future. This shop is super busy, arrive early or late, otherwise be prepared to stand in line outside the restaurant.
