If you don’t know what «gai bo», or chicken hot pot is, it is only the latest food trend in this city. There are various preparations, but this place does it in a simple step, by dumping chicken in a pot of flavourful broth, and use that as the hot pot directly.
You can start by eating the chicken and other good stuff in the broth (once they’re completely cooked through), then throw in other hot pot items. Or you can just throw things in as you like and eat at your own pace. Either way, with such a delicious broth, you hardly need any extra seasoning — except for their chili sauce. That stuff is legit and puts your mouth on fire!
We didn’t order the numbing spices broth as my sister is a wuss to chili spice. So we got the preserved veggies broth with chicken and pig stomach, and that is pretty good as well. Not as good as the preserved veggies broth in Taiwan (酸菜白肉鍋), but I wouldn’t complain ;)
As for other items to cook in the hot pot… I highly recommend the cuttlefish balls. They are bouncy and fresh, and definitely one of the best I’ve had!
Anyone allergic to smells beware; the store is filled with chili fumes. That might be a reason for some people never to set foot in here.
