Prosciutto is a magical piece of cured goodness. Not unlike the Iberico Jamon or the Culatello, the hand made efforts in salting/preserving meats for years then creating this super tasty cold cut must have been laborious. But delicious in its outcome. Fratelli Beretta is one of those old establishments that has been making cured pork products before the depression, before both world wars. That’s crazy to think about.
