Alfredo’s Pasta is a little Italian deli/food counter in the heart of Lund better known as «saluhallen» or the market hall. In my opinion Alfredo’s Pasta is best described by the expression«Hit-and-miss»! I believe the reason behind it is the fact that Alfredo’s Pasta is a little too lazy, indecisive and undedicated to be either a good food counter or a good deli. This is one of them palaces most likely run on the principal«if it is not broken don’t bother to fix it»! Sadly this is the general applied strategy in use here in Sweden, and the reason behind it is a simple one: costumer unawareness. Generally speaking Swedes are neither well informed nor well-travelled in cuisines or culinary matters making them not selective nor demanding. Unfortunately these facts are a clear signal to the restaurant owners that the location is much more important than the quality of food served. In other words returning costumers regardless of the existing terms, conditions or qualities are what make chefs and restaurants lazy and undedicated! Now back to Alfredo’s Pasta and its list of hits; varieties of home made fresh pastas, some however limited lovely authentic Italian cold cuts, cheeses and sweets. They do also offer decent pizza slices but the result can be pretty uneven. List of misses; no sandwiches(hot or cold) made with the house’s lovely cheeses or cold cuts. In fact no sandwiches at all which then makes it a deli counter more than a deli. The lovely fresh home made pastas are used to make dishes sold and offered on the spot and these dishes are what mark the place as «not even a good food counter». I like salt, I like it so much I have or always ask for a salt shaker or cellar on the table but please pretty please Alfredo’s LAYOFF the shaker please! Every pasta dish or sauce is way too salty. Why unevenly less or more decent pizzas you might ask and the reason is that pizzas are not made on order! What they do here is to make a large pie and then on order reheat a slice of it. Obviously the quality of the slice varies depending on how long it is been out of the oven before going back to be reheated. Again nothing wrong with the ingredients nor the toppings and their high qualities it is the execution that brings this place down! Still the only way to go with at Alfredo’s is the pizza slices as they not as salty as the pastas!
