History
Established in 2002.
Roastit Bubbly Jocks is an old Scots word for roast turkey. In the 17th and 18th century there were turkey farmers in the fields and wooded area surrounding Old Partick. When the business started in 2002 the concept was to rediscover traditional Scottish fayre and the full and fascinating history of Roastit Bubbly Jocks bistro is available on request. It makes for an intriguing read.
Meet the Business Owner
Mohammad T-Q A.
Business Owner
Hi, I’m Mo, and I’m the proprietor of Roastit Bubbly Jocks Bistro. Some of the people who have inspired me are Rick Stein, Pierre Coffman, Nico Ladenis, Christophe Novelli, Darina Allen, Elizabeth David, Jane Grigson, Yotam Ottolenghi and many other great European and Arabic chefs. I have been in the business of good food for over 30 years. I love to transform high quality fresh ingredients of fish, seafood, game, beef, lamb and vegetarian dishes etc. into a tantalizing picture on a plate without being pretentious. For me the most important part of the dish is flavour, texture and then presentation — in that order. What I like about running a business is the great responses from the customers that constantly return time and time again. Rarely when things go wrong, I enjoy fixing them. Our customers are a mix of younger or older, small or large parties. All my staff, like me, share a passion for good food in a relaxed environment.
