History

Established in 2009.

Paul trained in 2005 and qualified with a City and Guilds Diploma in Professional Catering. He also had a short period working at a local well known Michelin starred hotel and restaurant. He had a purpose built kitchen made in 2009 and started the business through a number of private client events and selling/​promoting his food at the local market in Wallingford.

He has built up a growing list of regular clients who are enthusiastic about the use of locally produced ingredients in the dishes The Late Chef produces.

Paul B.

Business Owner

Paul worked in the IT Industry for many years. His passion has been food and cooking. He trained at Thames Valley University from 2003 to 2005 gaining a Diploma in Professional Catering. He has also worked at a few local food establishments to gain experience, including Le Manior Aux Q’uat Saisons.

The Late Chef uses local produce wherever possible to create menus fo private and business clients. The concept has found resonance in the customers he serves.

Paul also created the Wallingford Food Festival first held in May 2011. The festival is now a regular event on the calendar and has won an award from Tourism South in 2012! He also broadcasts regularly on BBC Radio Oxford, talking about food, cooking etc…
