Ruby Tequila’s — Mex it up!

History

Established in 1991.

Ruby opened her first Mexican Kitchen on Paramount in Amarillo, TX. She added a location on Soncy in 2003. Her first location in Lubbock opened that same year. Ruby decided the original Paramount location needed some updating and moved to 2001 S. Georgia in 2009. In April, 2009, Ruby opened a second location in Lubbock, near the TTU campus across from the football stadium. Later in 2009, Ruby branched out to Houston and opened a location in the Willowbrook area.

Although she has quite a few years on her, Ruby’s leaving her footprint all across Texas. By cooking authentically fresh, made-​from-​scratch Mex-​Tex, Ruby doesn’t want you to settle for boring, processed Tex-​Mex. She wants you to Mex it up!
