History

Established in 2011.

The Prancing Chef started his career working after school in Morro Bay. Falling in love with food at a young age, The Prancing Chef got his name working under a World Renowned James Beard Chef. Nicknamed «Prancer» he quickly warmed the hearts of those in the kitchen, and would go on to start a blog that would turn into a catering company. Catering all aspects of your events, or being your very own personal chef The Prancing Chef has it covered and will always deliver his signature flair to every touch.

Get ready for a total culinary experience! I was recently treated to a personal tasting of all the delicious flavors of the talents that is The Prancing Chef and I couldn’t have been more pleased. «Pleased» is an UNDERSTATMENT! All my senses, including my sense of humor, were pampered and indulged. By far, the best food I’ve had the pleasure of indulging in. You will not be disappointed. If a personal and intimate experience is what you’re looking for, look no further. Socks officially knocked off!

Ron and I had the most amazing dinner Friday night, thanks to The Prancing Chef. (Also known as Anthony Allesmith). He gave us a dinner to remember. Absolutly beautiful. If you are looking for an elegant and wonderful caterer, look no further. Definitly a five star! We had Butternut Squash Salad with Maple Vinaigrette, Paleo Stuffed Mushrooms, Sweet Potato Mousse, Pumpkin Bisque, Thyme and Peppercorn Crusted Chateaubriand with Butternut Squash Purée and Roasted Brussels sprouts and asparagus tips with Cabernet Demi glacé and thyme fried onions, finishing with Sous Vide Crème Brûlée, We left feeling beyond satisfied!
Would most definitely recommend The Prancing Chef for any event!

Little did I know that by offering Anthony a garden grown butternut squash would lead to an incredible tasting. Using the squash as inspiration he created three courses that were flavorful and inspiring. The tasting began with a butternut squash salad, then a chateaubriand with butternut squash purée, and finished with a butternut squash bread pudding. The courses were well executed and balanced. I fully intend on spreading the word about this amazing chef and his business.

My Saturday afternoon was spent at a tasting with the Prancing Chef who isn’t primarily a vegan chef, but nailed it. Not only were the dishes delicious, but the plates were innovative with his twist of «bacon» wrapped asparagus using portobellos. The quinoa salad was splendidly tart with the lemon cumin dressing. And the Greek Pasta Salad tied it all together perfectly. The display of the food was beautiful. If you’re vegan and looking for a caterer, I highly recommend The Prancing Chef, this guy knows his flavors, presentations, and costumer relations.

I had the pleasure of attending a tasting with The Prancing Chef this past Saturday. I was blown away by the food. The espresso-​rubbed short ribs with grilled polenta was prepared to perfection, with balanced flavors and a beautiful presentation. I would definitely recommend The Prancing Chef to anyone looking for a caterer.
