History

Established in 2001.

Hyacinth Bean started as Polly’s Flower Farm in 2001 selling fresh flowers at the Athens Farmers Market. Because requests to do wedding flowers increased each year, Hyacinth Bean Florist opened for business in 2005. Since then, wedding business has steadily increased each year. Hyacinth Bean designs with locally grown flowers when possible, when not it buys from Esmeralda Farms, the winner of the International Silver Rose Award for its sustainable and responsible horticultural practices. Each year Hyacinth Bean has added more plants and locally made gift items to its product line and now serves as a foster site for the local humane society.

I love interacting with people so I designed the shop so that customers have access to the design room. and coolers so that they can offer suggestions on what flowers they would most like to have in their arrangements. I love animals so customers often see foster cats and kittens at the shop. To date we have had and found homes for 30 cats.
