Meet the Business Owner
Jim C.
Business Owner
A graduate of the Culinary Institute of America, Jim creates success wherever he unpacks his knives. Jim’s long history of bringing delicious food to grateful Coloradans started when he opened the Plum Tree Café and Tante Louise in Denver, where he caught Julia Child’s attention. Jim was honored that America’s most loved and revered television chef named him one of the top chefs in the U.S. in 1983, and featured him on her first «Dining with Julia» television program. The James Beard Foundation nominated Jim for «Best Chef in the Southwest» in 1991.
After this, Jim opened the award winning Wildflower Restaurant at The Lodge at Vail, as well as Cucina Rustica, another Vail favorite. He also spent time as executive chef at The Phoenician in Scottsdale, Arizona and Terrazza at Caesars Palace, Las Vegas.
«Regional cuisine celebrates the unique spirit of a place,» Jim says. «I love to use local ingredients and simple flavors to create great, comfortable dining.»
