2-​Day Introduction to Distilling Course & Workshop

The two-​day introductory course covers the beginnings of commercial distilling logistics from building codes to regulations through sales and distribution, which is followed by a hands-​on workshop that covers commercial production from top to bottom.

History

Established in 2009.

The distiller has been in training to produce spirits for over 20 years and has received personal tutorials from some of the major distillers in country. The production and administration functions are well known people from the beer world. Collectively the team has over 50 years of experience with creating and producing craft beverages.

I am remiss, not reviewing this distillery/​educational center/​blast to the past. The owners here are friendly, low key and serious and that’s a mix! My experience has largely been on Saturdays when they turn out large quantities of product and man the serving/​retail counter up front.
I know this place from a) volunteering and basking in the old school charm of handfilling and labeling craft distilled products and b) being a customer of their many drinkable charms.
I recommend that you go develop a connection with your whiskey, rum and vodka. It won’t be the same again. My personal favorite are the flavored rum and the special whiskeys.

At first I was put off by their website’s instructions — text for a tour, essentially — but my first visit to Downslope was great! The tour was of the distillery was extremely detailed, given how there is relatively little equipment. The master distiller answered all of our questions, from excise taxes to barrel trade. We were able to sample just about all of their spirits, which was a really nice way to make sure the bottles we took home were our favorites.

A small distillery in an unassuming industrial park that cranks out about 14 types of spirits including whiskey, rum, gin and vodka? Yes, please.
There’s a small tasting room with a bar and a few high tops, plenty of room for a few tastes before you snag a couple bottles for home and friends.
If there are some folks in the back, they’ll gladly give you a tour if you’re interested. It’s pretty cool to see the working still and all the aging barrels back there.

Months later, we are still going through all the bottles of liquor we got using the Living Social deal. We have determined that most of their liquor tastes the same. Their rum tastes like their whiskey and their gin tastes like their vodka, etc. Nothing stood out as awesome and we don’t purchase it when we go to the liquor store (and even scoff at how much they want to charge for it normally). We are all about supporting local, and the staff was nice, but the tour isn’t worth paying for (hope it’s usually free) and the liquor, well, up to you.
