History

Established in 2008.

Pastries Not Potatoes came about owner Melissa Humphrey discovered her friends desire to crave their overwhelming and underfed sweet tooth.

Typically Melissa would show up at parties with a box full of cookies or a cake to commerate whatever occasion was being celebrated. She quickly learned that there might be a profit to be had when people started to ask what she would be bringing, or made specific requests.

Why call it Pastries Not Potatoes, though? Sure, it’s amusing and hardly forgettable. The name generated from a instructor while Melissa was enrolled at the Cooking and Hospitality Institute of Chicago; where she recieved her degree. The instructor mentioned that while potatoes were hearty fare… their integrity has a tough time changing. Not so with a pastry — cakes, cookies, pies and puddings are delicate. You have to be gentle. You have to treat it «like a pastry, not a potato.»

And with that, Pastries Not Potatoes was born.

Meet the Business Owner

Melissa H.

Business Owner

Melissa has been in the food service business for the last 16 years. She has worked as a hostess, server, bus boy, bartender, manager, dishwasher, cook, and chef.

The first ten years of her career were spent working with the customers and guests in the «front of the house»; and when looking for an opportunity to make herself more marketable as a manager, the next logical step was to recieve a culinary degree.

As luck would have it, shortly after finishing some baking classes at the culinary school she was enrolled in; Melissa was offered the head pastry chef position of a restaurant she had been working and without thought, accepted the offer.

Since then she’s been crafting her skills at establishments both here in Chicago, and Los Angeles as well. Running a dessert only catering business has allowed her the opportunity to not only create the things that she loves, but work hands on with her clients as well.
