Mr. Rayfield Jefferson /Catering By RJ& wife did the professional catering for my Grandmother’s 90th Birthday Bash at our Family Ranch today and was it ever special. A very wise choice to choose catering as it made it so stress free and easy to feed about 50 people with some very unique«Wow factor» food, and a particularly superb choice of Caterers. My Father selected them which ironically was a great Father’s Day gift to our Family, even while we were supposed to be celebrating him and Grandma, haha! Now if you look at the sheer number of high end restaurants my wife and I have eaten at across this country and have reviewed here on Unilocal,let’s just say that we do indeed know good food when it’s found. Mr. Jefferson is a culinary Master. To begin with, the fresh fried Swai Fish(Southeast Asian Iridescent shark) were very easily in the top 5 fried fish I have ever tasted in my life, and they were hand breaded and fried to order on site. Everyone kept raving about«the fish» and it was indeed all that. Brisket was magnificent and smoked to perfection, and all sides were unique variations of Southern Comfort foods that right even down to the potato salad, all possessed a flavor complexity that was unique and just plain happy fun food. Having a refined palate and being able to detect flavors and seasonings of foods is something I take pride in as I have worked in the food and catering businesses as a hobby on and off for many years. Yet Chef Jefferson’s creations boggled me, as he went over the top of what I could detect in seasoning perfection, and my wife Hiorko, having a similarly trained palate agreed. When visiting with Chef Jefferson I learned that before«retiring» into casual catering he used to run some critically acclaimed restaurants in California and viewed a portfolio containing rave media reviews of such. Catering By RJ comes with the highest recommendation by myself, Hiroko and our entire family as they really knocked the ball out of the park, complete with an awesome hilarious comedy sketch. Catering doesn’t get better than this, and finding something this special is exactly what Unilocal was intended for.
