Service amazing, very friendly and attentative(even for a fairly large group), Marqs are great(spend an xtra buck and go for the Patron!). Salsa excellent, Enchilada’s great, Tamales great, Chile Rellano(soft) not so good, but the Crispy I was told by others in the party were super good, as well as the Burritos. Maybe not the best in Colorado, but really good for the area and worth going to.

Fell in love at the first bite! It’s difficult to find restaurants that my husband and I can go to with friends, much less really enjoy, since I’m vegetarian and he’s vegan with a wheat allergy. Many restaurants have maybe one token vegetarian offering, and have no clue how to make good vegan food. This place TOTALLYROCKS! Nothing like the typical meat and cheese with tons of lard Mexican fare, the menu is fresh and innovative and incredibly flavorful. We’ve actually gone from never going out to being once-a-week regulars — and our awesome regular waitress is happily helping us with our Spanish! Their salsa is the best we’ve ever had, and our craving for it is part of why we go so often(anyone know where to find the recipe?). Hubby’s favorite entrée is the vegetarian fajitas, mine is split between the veggie chimichanga, spinach enchiladas, and the vegetarian burrito.

Mexican in Conifer? Sure! After a hike, we stopped in for lunch and a margarita. The margaritas are served in shakers with small glasses much like 3 Margaritas does. They were tasty margs for house margs. The lunch menu had nice variety and prices ranged between $ 8-$ 12 or so. I had the chicken enchilada & tamale combo. The enchilada was really good, however I could’ve used some more sauce to go along with my tamale. The tamale was large & flavorful. Mom ordered the chicken en mole which was pretty good. Not the best mole ever… a little on the sweet side … but pretty good. I liked the chips and even though the salsa had some chunky tomato pieces in it, the spiciness was pleasant. Our service as spot on, friendly, and attentive. I head through Conifer rather regularly so I’m sure I’ll stop back in! The only thing that might’ve made my visit better was if my mom hadn’t told the server that I speak Spanish… they were all too willing to get me to talk after that and I wasn’t prepared :)

On a cloudy summer day, the husband and I took a drive to Bear Creek. We drove to Morrison and then to Evergreen along the creek and on to Conifer at I70. We spotted Fiesta Jalisco in Conifer and decided to stop for lunch. We did not expect much and I just hoped that the chips and salsa were decent. Fiesta Jalisco offers a surprisingly good meal; in fact, the husband said after the meal that it was worth four stars. So, four stars it is. I had the cheese enchilada and soft rellano combination and the husband had pollo enchaladas and taco combo. Meals are served with rice, cole slaw, and your choice of tortillas(corn or flour) and your choice of beans(black or rancho). My enchilada was delicious and you can barely taste the peanut butter in the homemade enchalada sauce; the rellano was equally as good. I brought a menu home to help with writing my review and realized that Fiesta Jalisco is a family Mexican Restaurant meaning a small chain in the Colorado Mountains. This is the same Fiesta that I enjoy in Eagle; I would say that the Rodriquez DeLeon family has a winning combination of recipes and good service.

Service was good, and the place is new and clean. Tomato in the red sauce? Yuck. Are we in Idaho or something? Nothing here stood out. Either standard or sub-par. There aren’t too many options in the area, but you’d be better off driving up the hill a mile further to 3 Margaritas.

Their menu stated that they had the best margaritas in town, which isn’t saying much considering they are the only Mexican restaurant in a 10-mile radius. The waitress brought them out in a shaker along with the smallest margarita glass I’ve ever seen. Seriously, I felt like Alice in Wonderland when she went through the small hole – or like I was 4 and pretending to have a tea party with alcohol. They were tasty, though. My cousin ordered the sangria. It was awesome and clearly homemade. They offer fillers such as celery, cottage cheese and corn in their burritos and enchiladas. They make their enchilada sauce with peanut butter, which I think is gross, but hey, to each his own. The food was good for being a Mexican restaurant in a mountain town, but it’s nothing you’d go home and tell people about. But hey, the scenery was awesome from the parking lot and their booths had fancy wood carvings of horses on them.

When you go to the mountains, you choices thin out quickly. I have been pretty skeptical of Mexican restaurants in mountain towns, but this place is nice. They have a massive(bordering too big) menu feature many interesting twists to the standard mex fare. I went basic and tried the chile verde burrito — solid. It came smothered in their enchilada sauce and guac. My wife tried the chicken enchilada, which was basically another burrito. The best part was dessert — we went with the Chimichanga Manzanas — basically apple pie filling in a deep fried tortilla served with a side of strawberry ice cream. YUM!

Celery in a Burrito? It’s hard not to think it’s cheap filler… Other than that the food is decent. The place is brand-spanking new, and the servers are all new too. Meaning they hang out in the kitchen getting to know each other, rather than checking up on the table. The biggest bummer was the fried Ice Cream. I get very excited when I see fried ice cream on a menu. Like, VERY excited. So I ordered it, and when it came it was cold and soggy! As if they had either made a huge batch of fried ice cream 2 weeks prior and frozen it, or they had ordered balls of fried ice cream from elsewhere. Total bummer…

You can tell as soon as you walk in that it’s a new building and it was newly decorated. The décor in here went pretty far. Lots of painted Spanish tiles and stuff like that, sombreros on the walls, and fake flowers everywhere. At 4:30 on a Sunday afternoon it was really busy too. The chips were good, the salsa was a little bland, but they also served a Mexican Cole slaw with the chips and salsa that was good. The service was really flaky. I had to order an iced tea twice. I ordered the Camarones Mexicano(shrimp with mushrooms and red sauce over rice) and it was really good. I think the tortillas may have been made there. My wife ordered a thing called the«skinny donkey» which was a vegetarian burrito. I recommend not putting celery in a burrito. All things considered, this place was pretty good.
