Zilaro Cellars is a modern boutique winery, producing classic varietals with a twist in small batches for the discriminating wine drinker. Our grapes come from single vineyard sources delivering character and unique expression to the finished product. We favor American oak barrels and the rich tannin they bring to our wines.

History

Established in 2009.

The art of winemaking is a tradition in my family. In an Italian American neighborhood in Waterbury, CT, my father grew up watching his grandfather make wine in the basement. Wanting more connection to my ancestral and familial roots, I set out on a mission to make great wine. When I first started, I opted not use a «kit», instead choosing to procure real Cabernet Franc grapes from a small vineyard in Paso Robles, CA.

I am proud to say that first vintage turned out so well my family and friends could not get enough. This posed a problem, it conflicted with my goal of personal consumption! Unofficially created in 2009 and formalized legally in 2010, Zilaro Cellars was born with my vision of creating high quality wine in southern California using grapes from AVA’s further north.
