History

Established in 2004.

Back in 1984 one of our owners, Mark Fenske, worked with two others to open T-​BONES Great American Eatery in Salem. Soon after, Hudson T-​BONES was opened in 1986 & Tom Boucher joined our team as a server. Tom found a passion for quality food & service & soon became a T-​BONES partner. Bedford T-​BONES then opened in 1989. Tom & Mark collaborated on a new concept, our sister restaurant, Cactus Jack’s in Manchester in 1995. CJ’s differs by offering a southwestern flavor & feel. Derry became home to another T-​BONES in 2004. Later, in 2007, we opened the first ‘dual’ concept restaurant in NH, T-​BONES & Cactus Jack’s under one roof on Lake Winnie in Laconia. After many years in the company, Dan Fraser became partner in 2008.

Our newest concept, Copper Door, opened in Dec. 2011 in Bedford & features «Approachable New American & Upscale Comfort Foods». It’s our first concept to offer Private & Semi-​Private Dining for business meetings, bridal showers, birthday parties & more.

When our Hudson T-​BONES location opened 1986, Tom Boucher took a food server position upon graduation from college. Although Tom had earned a full academic scholarship to a prestigious graduate school, he finished only the first semester and returned to T-​BONES to earn a little extra cash during the holiday break. This could be called the longest holiday break ever for Tom, as he gave up his scholarship and never went back.

Since then, Tom has worked to consistently improve the service and product his restaurants provide to his guests. His goal is to continuously provide guests with fresh and made from scratch menu items and well as a comfortable and welcoming dining atmosphere.
