We had heard for awhile what a great breakfast place this is, so we gave it a shot last weekend. Wow! I have been dreaming about the vegetarian frittata since I took the last bite. My husband had biscuits and gravy with eggs over easy and said they were excellent as well. I love everything about this place — the food, the atmosphere, the coffee, the friendly help, the chefs working right in the middle, and that so much of what they serve is locally sourced. I can’t wait to go back.

Instantly has become my favorite breakfast joint! Pancakes and breakfast stir-fry are my favs. The service is excellent and seem to love working there which always makes my experience great. Love to watch the chefs work away in the middle of the restaurant.

Came here because of all the Unilocal reviews and wasn’t disappointed. My companion and I both had the same thing: Their most popular omelet meal, which I don’t remember the name of(but I’m sure the waitress will tell you), and it was substantial and delicious. Service attentive and polite without being obsequious. Coffee good but not outstanding. Atmosphere rustic and welcoming. A fantastic breakfast experience all around.

We stumbled upon this place and were so glad that we did because it is one of the best breakfasts we’ve had in the area. The café reminded me of spots I’ve frequented in Brooklyn – very friendly vibe, White Stripes and Black Keys playing, and cozy place with lots of character. Our server was super friendly and personable. I had the LA stir fry which was flavorful and chock full of veggies. Sour dough bread was delish and I hadn’t had grape jelly in eons so it was a special treat. My beau had the Southwest Hollandaise which he described as a real inventive and delicious take on Eggs Benedict. We shared the special of banana bread chocolate chip French toast(seriously rich and decadent and topped with walnuts, walnuts I say!). We couldn’t finish it so we took it home for a late night snack. Coffee was so good that we purchased two pounds to take home to grind as well as two bottles of specialty hot sauces. Can’t wait to go back and bring the fam. A must visit in the Easton area and its BYOB so I’ll be bringing the mimosa makings next time for sure.

If you’re looking for a simple menu and fast service, this is the place. I tend to choose from the specials menu as they seem to be more creative than the regular menu. If you want real maple syrup, be sure to ask when ordering because it’s hit or miss and if you don’t like high fructose corn syrup, you’ll want to verify before ordering.

I am a huge fan of Blue Sky in Bethlehem, and was thrilled when a second one opened in Easton. This one is just as amazing as Bethlehem! The first time I visited, I had a cinnamon cream cheese stuffed french toast, and most recently I had chocolate chip banana bread french toast — both were phenomenal. In addition to the wide variety of items on the menu, they also offer different specials each week, which are hard to stay away from. My friends have had different egg-meat-veggie stirs from the menu, which they say are incredible as well. The constantly changing specials make it difficult to stay away for too long. The restaurant itself is large and has a couple of outdoor seats for when it’s warm outside, so there’s hardly ever a wait. Blue Sky(either location) is without a doubt my favorite breakfast restaurant in the Lehigh Valley!

We accidentally stumbled upon this place after unsuccessfully trying to get a table at a nearby establishment. What a stroke of good fortune! We actually had the honor of being their first dinner patrons and if our experience is typical of what they have to offer in the evening, we’ll hardly be the last. The service was fast, our servers were fun and personable and the food was top notch. Seeing as how they were new to serving dinner, we inquired as to what they considered the signature dish. The recommendation was for fried chicken and 3 of us opted in. The amount of food we got was enough to feed a party of 8(chicken, corn bread, skin-in smashed potatoes). So we are until we were stuffed and took the rest home; happy to report it makes great left-overs. The other member of our party ordered a past dish, which they happily customized to meet her needs. Again, terrific and again plenty of great leftovers. The dessert options included a wonderful brownie with locally-made vanilla bourbon ice cream. In a word: AWESOME! We applaud the establishment’s farm to table approach to creating a menu. While the décor was nothing special, there was a fun and funky vibe that was far superior to the packaged«ambiance» of a chain restaurant. Don’t know when our travels may take us to Easton again, but when they do we’ll be back.

I would love to give it more stars but there were a few things about the place that I found annoying. Mostly, the problem was our waitress. The food itself was good. I never had huevos rancheros before so I can’t compare, but in my mind I thought the ingredients should have been«mixed» together than all separate items on my plate. The portion sizes were good and there was a nice fella walking around asking if things were good. They either need more waitresses or waitresses that know how to serve the public better. We received no silverware so I couldn’t stir my milk in my coffee. I overlooked the big chip on my cup and certainly could have asked for another cup if the waitress would have stopped by at least once. And don’t hand me my plate of food into my hands. I’m sitting on the edge, put it down. And stop by to ask if everything is ok or if we want some ketchup or anything, at least once before you get my automatic tip. And slow down. It would be nice to take the check and look into someones eyes for a thank you instead of reaching and swiping. Sorry if I sound like a picky complainer but it was much worse than I am saying. I liked the feel of the place. Certainly not a diner. Nice place to get breakfast or brunch. Guys were back there cooking up a storm. I think they try to make the food stand out. Unfortunately I would try another place before going back to here.

I have been to both the Easton and Bethlehem locations many times and have noticed that The State lacks consistency. Sometimes it’s slow and mediocre. Sometimes it’s on point. I have a favorite dish that I get. Every time. Both locations. I will say that I have always received excellent service at The State. I’ll continue to eat here, always hoping for that stellar meal I know I’ll sometimes get.

Inconsistent experience for our group of 6. Seated quickly, but waited a good 20 minutes for coffee. Specialty pancakes(peach) were wonderful, but Southern Hollandaise meal had cold cornbread. It would have been so much better toasted(I’m an eggs Bennedict enthusiast) and appreciate the creativity with this dish. My husband’s specialty omelette was very tasty(with Gouda and carmelized onions) but his sourdough toast was burned black on one side. We will be back, as this place has a super cool vibe and creative menu. Hope some of the inconsistencies can be worked out.

Fabulous breakfast menu! Brought both sides of the family here for breakfast and everyone was wowed! I’d love to see them keep the cinnamon roll pancakes on the menu full time :) We just moved to the area and are thrilled to find such a great place — we’ll definitely be back!

I had high hopes for this place, almost everything that I had read was positive. This is a cute little place tucked away on a side street, the waitress was good. I had ordered the simple two eggs sunny side up, bacon and rye toast, it came with home fries. The toast came out five minutes after my plate, the potatoes were cold and«old», the bacon was terrible, over cooked and dry, it was difficult to eat. A very simple dish very poorly executed. The three stars are for the eggs. I won’t be going back.

Fantastic brunch food with a nice outdoor area on the street that is dog friendly. The area is a little sketchy though it is Easton, but the restaurant is very nice, including the few small tables set up on the front porch. The inside is fairly small and feels a bit like a warehouse. Service was good and very quick, though a little impersonal. The breakfast and lunch food was phenomenal. The coffee was good, on par with a diner that has seasoned the pots well with coffee since the Reagan administration. The fried egg Reuben was delicious with a great mix of flavors and textures. Though a bit messy from all the components, they blended together well. The southwest hollaindaise was also excellent with a delicious chipotle sauce. The home fries accompanying it were also great.

Just like the original Bethlehem version this place is a gem. This new location is the old State theater café. I love Blue sky for their excellent breakfast options, way more unique and tasty than your local diner. The menu selections at the Easton location are similar to the Bethlehem location, but there are some unique items here. I opted for the Southwest hollandaise which was phenomenal. Our server was upbeat and very efficient and we were in and out in under and hour. The only downside is that parking can sometimes be tricky in Easton but it’s worth a short walk.

I’ve been coming here since I moved to Easton eight months ago. It’s my favorite restaurant in the entire Lehigh Valley area and now that I’m moving I will miss this place a great deal. The food is always excellent and well prepared. Simple menu and they can make anything happen for you if you crave custom. Above all, the staff is fabulous and I will miss chatting with them. First class service with a smile!

So happy to have a place like this come to Easton! The prices were right, the staff attentive and friendly, and the food had a creative twist to your typical breakfast and lunch fare. The menu was a bit overwhelming at first but we decided to go with the Rupert and the Peta. Both were awesome and I would highly recommend. I haven’t been to the other location in Bethlehem, and wasn’t even aware that there was another location so I can’t compare the two. However, I will be back to Blue Sky again! They also serve up a dinner menu on Fridays and Saturdays. Looking forward to giving that a try as well!

Wow… I can’t stress enough how good the breakfast is here. The omelets and breakfast stir frys are awesome and the French toast is thick, light, and fluffy. The atmosphere is cool and trendy and the service is good. They are still going through the«opening phase» where they are trying to find their groove, but once they hit their stride this will be another 5 star establishment gracing Easton with it’s delicious cuisine. But until then, it’s 4 stars for now… Hopefully I can up it to 5 after my next visit.
