History

Established in 2011.

The inspiration behind Chiladas began in 1974 when owner, Cy Fraser, opened Bilbo’s Festivo in the building that now houses Shinola Jewelry in Eastsound, WA. In 1976, Bilbo’s moved into a renovated NW style bungalow house. All local craftsmen and artists helped transform the house into the cozy, quaint dining room and incredible outdoor courtyard that is now home to Chiladas. After leaving the helm of Bilbo’s in 2006, Cy and his wife, Julie, took five years off to enjoy Orcas Island and the world beyond through travel. In 2011, Cy and Julie returned to the restaurant business under the playful name, Chiladas, which emphasizes the best of Bilbo’s with some fresh, innovative additions to the plates. All food at Chiladas is made from scratch, with quality holding the utmost importance. Cy and Julie are pleased to be serving up fresh food again and hope to see YOU soon!
