Hepler’s specializes in grass-feed beef that is ‘finished’ for several weeks with corn feed. The result is meat that is flavorful but not too lean or tough. And their prices are great. Sometimes they have a ½ cow special — I’ve seen it as low as $ 1.99/lb. When I had a gall-bladder problem, this was the only beef I could eat due to its leanness. We prefer the whole ground beef since the steaks aren’t as well marbled as corn-fed beef you buy in the supermarket. The flavor, however, beats the store-bought beef as does the price. If you use the ground beef on the grill, it’s best to add an egg per pound or two so that it stays together. We also like their pepper bacon and pork sausage. A friend says their seasoned chuck roast is the best she’s ever had(I haven’t tried it yet). About 15 families in our neighborhood will place orders and I’ll drive back a van-full of meat.(We live near Washington, D.C., about six hours away.) If you want more than a small amount, make sure to order at least a few weeks ahead of time so they can requisition the meat from local farmers and butcher it.
