History

Established in 2005.

Shane Tracey started his pastry career in Tucson Arizona in 2000 in a traditional German Bakery from his Head pastry Chef Charles Scott. In 2002 Shane and his wife Tiffany Moved to Eugene Oregon because Shane was thinking about attending Western Culinary Institute but decided its focus was different. He learned of the World Pastry Forum in 2005 (which features some of the best chocolatiers and pastry chefs in the world) Shane donated his time 14 days working 14 – 16 hours a day all to learn from these great masters. In 2005 Shane and his wife decided to create their own business Kekau Chocolatier where Shane created classic chocolates and created new flavor profiles such as fresh thai curry paste foulded into a white chocolate ganache. He started winning around the state then entered the Pastry Scoop confection competition in 2007 and won his first national Competition. Now he has opened Nib where uses familiar and non familiar flavors to create an experience. «Eat Dessert First»
