Specialties
Lunch specialties include: hot and cold gourmet sandwiches and paninis, homemade soups, unique salads, and fresh baked cookies and pastries. We offer coffee specialty drinks and feature a full line of The Republic of Teas’ products.
For soups lovers, the Lunchbox creates two made-from-scratch soups daily, and offers vegetarian/vegan and gluten-free soups options throughout the week. Since all sandwiches are made to order, the Lunchbox can accommodate dietary restrictions including gluten free, dairy free, and low carb needs.
All sandwiches come with a choice of our signature bowtie pasta salad, fresh veggie ribbons with rosemary ranch dipping sauce, or regular or jalapeño kettle chips. We’re the local lunch spot with weekly features to keep the menu fresh. Our lunch options also include soup and salad, ½ sandwich and soup or salad, and quiche with salad/soup options for smaller appetites.
Light breakfast items are available even during lunch hours including homemade quiche, frittata, loaded oatmeal, and fresh baked goods including scones, cinnamon rolls with cream cheese frosting, muffins, and specialty breads such as banana and zucchini.
History
Established in 1996.
How it began:
The Lunchbox’s creators, Reggie and Sharlene Fouser, opened Jitters in beautiful Flagstaff in 1996. To have more time for their family, they made the tough decision in 2001 to sell the restaurant. Over the years, the Fousers continued to miss serving their special customers, who were more like family than customers.
In early 2012 the Fousers launched Jitter’s Lunchbox to fill a niche to provide quick, healthily lunches to the Flagstaff business community, In this trimmed down version of the original Jitters, the Fousers brought back most all of the original lunch favorites, and added additional items such as hot sandwiches, and new soup recipes so there is always something for everyone to enjoy.
New Location:
Sometimes to move forward you have to go back. After their lease was not renewed on Fourth St., the original Jitters location on Route 66 became available. In Nov 2014 the Lunchbox relocated just three miles down the road to the spot that feels like home!

Business Owner
Reggie & Sharlene Fouser have restaurants in their blood! Having worked for others in all aspects of the industry, in 1996 they decided to branch out on their own and opened Jitter’s Gourmet Coffee and Café on historic Route 66 in Flagstaff.
Other opportunities called and in 2001 the Fouser’s sold Jitters, but the love of creating great food and filling people’s bellies kept drawing them back to the food business. Identifying a niche for fast, healthy lunch alternatives for the business community, the Fousers jumped back into the fire in 2012 opening Jitter’s Lunchbox.
Forced to move locations, the last project the Fouser’s undertook was to seamlessly relocate the Lunchbox to its new location. Even though the new location is just three miles down the road, the effort was the same as opening a new restaurant. The move was accomplished in Nov 2014, and the Fousers are back focusing on creating a perfect lunch spot for locals and visitors alike.
