History

Established in 2012.

The Waffle Lab is the brainchild of founder Bill Almquist, who desired to bring the magic of Liège waffles to Fort Collins, CO.

Driven by an entrepreneurial spirit and recognizing the lack of anything similar in the area, Bill began experimenting with Liège waffle recipes and sweet and savory combinations until finding just the right ones. Though initially conceived as a storefront café and restaurant, Bill decided to first test the unique food concept in the form of a mobile food trailer – the name of which was inspired from the home kitchen where he first carried out his culinary experiments. The Waffle Lab was born.

The Waffle Lab first opened its window in April 2012 in the parking lot of Pateros Creek Brewing Company in Fort Collins. The Waffle Lab quickly became a hit and continues to grow a very loyal following, and since then, has expanded its locations, events and offerings.

Bill A.

Business Owner

Bill Almquist arrived on the Front Range of Colorado in the summer of 2011, still a bit damp from the Oregon climes where he attended grad school and worked for several years as an urban planner for the city of Eugene. Prior to pursuing a Master’s Degree in Planning from the University of Oregon, Bill had spent considerable time in the restaurant and hospitality field as a waiter, a cook, a bartender, a tour guide, and a manager, among other positions. Bill received his undergraduate degree at Pomona College in California, which set him off on a rich journey of personal and professional experiences around the country and around the world. He brings a vast array of skills to the dining table, including: top-​notch customer service, a dogged work ethic, a creative eye, excellent attention to detail, a systems thinking approach honed through his planning background, and a deep personal commitment to sustainability practices.
