We also have specialty dishes pre-selected by our chef so that you don’t have to worry about choosing, we have pre-selected the flavors/dishes to fit perfect for many appetites! History
Established in 2014.
The «Improved» Pegaso Mexican Diner, located on Ft. Worth’s Bluebonnet Circle is the joint effort of rookie restaurateur Jay Coates and the talented Chef O.B. Luna. Together, the two have created what they call a «Mex-Tex» concept that appeals to all ages and palates. The new and unique flavors of Pegaso are based on Chef Luna’s years of experience in many different types of cuisine.
What is a Pegaso?
Pegaso is Spanish for Pegasus, the winged stallion of Greek Mythology who is typically portrayed as a pure white and majestic steed. It is said that wherever Pegasus planted his hoof an oasis would form and a spring would emerge giving life to the area. Our kinship to this animal is the reason we chose him to represent us. We strongly believe that we are not only here to serve those who walk into our dining room, but the community at large.

Manager
Jay Coates, an admitted Mexican food-aholic, has a simple philosophy. «If we don’t win you over with our food… we’ll win you over with our smile.» Usually followed with, «we’ll get you with the food.» He believes that everyone who steps into the Pegaso dining room or uses the Pegaso On the Fly Catering Kitchen should be served the best food possible with the best service possible.
Chef Luna’s wide ranging techniques provide the people of Ft. Worth something new while maintaining the comfort food feel that Mexican food has become to Texans.
