Fusion Bites, inside the Ayres Hotel in Fountain Valley, CA, is a modern Asian Fusion tapas style restaurant. Serving drinks and an eclectic, flavorful menu.
Fusion Bites has a contemporary vibe and plenty of TVs for the sports enthusiast. Cozy up around our beautiful patio and fire pit, or join us at the bar for Happy Hour, 4:30 pm-6:30 pm daily. Our full service bar includes wines from all over the world as well as a great Sake list.
We have taken popular dishes from various Asian cultures, deconstructed them and repackaged their flavors into the perfect bite. Distinctly unique, every Fusion Bites slider starts with handcrafted steamed buns loaded with Asian Fusion cuisine, drawing upon sophisticated influences from China, Vietnam, Japan, Korea and Thailand.
This is not your «same old, same old… been there, done that» kind of food. We have a passion for fresh and locally farmed ingredients and a passion to deliver something that has never been done before. History
Established in 2014.
Fusion Bites opened its doors in 2014 with the goal of creating truly unique, palatable Asian Fusion inspired tapas. Ranging from Vietnamese, Korean, Japanese, Thailand, and European influences, we have broken all of the rules, and have the best Asian Fusion Tapas cuisine in Orange County. We have really new and exciting foods and can’t wait for you to try our one-of-a-kind menu.

Rosa H.
Business Owner
Rosa graduated from Laguna Culinary Arts, Laguna Beach while studying under French Chef Laurent Brazier and Maurice Brazier. She then went on to Italy, where she graduated as the Master of Italian Cuisine at the Italian Culinary Institute for Foreigners, Costigliole d’ Asti, Italy. There she had the opportunity to study under Simone Murru and Michelin Star Chef Pier Bussetti. After returning she worked at Drago Centro, Los Angeles with Chef Celestino Drago and Ian Gresik.
Rosa also spends her time as a free-lance floral designer, event planning, home improvement enthusiast and dabbler in molecular gastronomy. Cooking since she was 14 years old, Rosa knew that a life in food was inevitably where she would land. Her love and passion for food shines through her dishes thus Fusion Bites was created.
