Established in 2004.

Fleisher’s Kingston is the original shop and the epicenter of the Craft Butchery movement! Nestled in the Hudson Valley our local shop is where you come to get to know the butchers just as well as you get to know the meat. Our values are quality, craft, relationships, responsibility and transparency, meaning you can ask where any of our products come from and get a real, straight answer. Our goal is to responsibly source the best tasting meat in the world and expertly cut it for our customers to enjoy just enough. It’s not about how much meat you eat, but what kind.

Favorite Cut of Meat: Bone-​In Cross-​Cut Lamb Neck

Why: Cheap and delicious. I love stew, and this is my go-​to lamb stewing cut. Curry it or slow cook it.

Favorite Recipe: My Chicken and Chicken & Lamb Sausage Gumbalaya (gumbo /​jumbalaya). Ask me for the recipe when you stop in! I’d love to share it but it’s too long for this text box :)

Fun Fact About Me: I love animal tattoos. I have 3 — a moose, and panda, and an inchworm. I plan on getting a turtleurkey tattoo in the near future — a turtle wearing a turkey halloween costume.
