Established in 2011.

Our kitchen is owned and managed by Chef Carolyn Gilles. With good food in her belly and entrepreneurship in her blood, she believes that collaboration is key to any successful project. Our chefs and educators are selected for their skills, unique eduation backgrounds and passion for fresh, healthy foods.

Meet the Business Owner

Business Owner

Carolyn Gilles received formal culinary training in 2005 from the Natural Gourmet Institute for Health and Culinary Arts in New York City after many years of restaurant work. She worked as a cook at New York’s renowned vegan restaurant, Candle Café, and then as a personal chef to Manhattan and Brooklyn clients. In addition, Carolyn was busy finishing her undergrad degree from The New School and building a non-​profit, Green Edge Collaborative.

Now back in her home state of Kentucky, Carolyn works as a business and graphic design consultant with her company Bourbon & Beans and also maintains all aspects of and teaches at The Wholesome Chef. Carolyn hosts private cooking lessons in addition to her regularly scheduled classes specializing in vegan and vegetarian cuisine.
