The Mill coffees are fresh-​roasted in small batches, right in our store. Our coffees include single-​origin beans from all the great coffee-​growing regions of the world to include custom and classic blends, as well as a range of flavored as well as decaffeinated coffees.

Some guys were working in a local bike shop and found themselves a bit bored and cold in the middle of a Nebraska winter. Somebody had the idea of trying to actually make the usual «shop» coffee better, and it shortly became a bit of a obsession/​contest amongst the group. Soon friends and friends of friends started hanging around as much for the coffee as the bikes, and an idea formed: Lincoln could really use an actual coffee house.

The Mill became a business of it’s own in a tiny space in downtown Lincoln. Several moves later, each motivated by demand for more coffee, espresso, and tea, and more space in which to congregate around it, the primary Mill now resides in it’s (hopefully) permanent home in an old brick warehouse in the downtown Haymarket district. Our second location, in Lincoln’s College View neighborhood, opened in December of 2001.

I first experienced the Mill back in 1978 when it was a tiny gourmet coffee bean store in the corner of a hippy bike shop. I was an accounting student and did the books for the bike shop and the Mill for about 3 years. As I went on to get my CPA I held a number of different accounting, finance and «business» type jobs, all the while continuing to oversee and sometimes do accounting and tax work for the Mill.

In 1991 The Mill had grown to a point of being a full fledged espresso bar, gourmet roaster, and retailer that needed someone like me full time. I was ready to jump off the corporate wheel, and after negotiating an ownership interest, devoted myself full time to The Mill. It was one of the best decisions I’ve made! I get to work with terrific people on both sides of the counter, strive to enrich the community near and wide, drink terrific coffee AND get paid to do it.
