I make Chicaoji Chipotle Chile Sauce, a medium spicy sauce featuring the unique flavors of goji berries, cacao, and chipotles. All ingredients are organic, vegan, kosher, gluten free, and mostly raw (except the smoked chipotles). Use Chicaoji on any food or include it in marinades, dressings, dips, desserts, BBQ sauces, or cocktails.

History

Established in 2008.

I created Chicaoji Chipotle Chile Sauce with the help of the community of friends and family who gather at the Vortex Juice Bar and Café on Lopez Island

It started when a friend gave me a handfull of raw organic goji berries and cacao nibs together. This amazing flavor seemed to need just a little chile heat so I went over to Blossom Organic Grocery to buy one of every kind of chile they had on the shelf. I experimented with the ratios of various chilies, vinegars, salts, and sweeteners. I decided I only wanted to use the best ingredients.

I brought my experiments to the Vortex for tasting and critique. In about 2 ½ months I had the recipe to what became Chicaoji.

The new sauce needed a new name so disassembled the names of the main ingredients:

CHIpotle + caCAO + goJI became the word CHICAOJI

At first, I was just trying to make a nice sauce to put on our meals at the Vortex but people kept asking for more and more. Now I have a small business that makes it available to you

Born in Texas, I rambled around a good long while before landing on Lopez Island about 25 years ago. I’ve experimented with salsa and hot sauce over the years just for fun. Mostly I changed the shape of wood using the tools typical of a variety of industries, be it construction or tree service or such.

When Chicaoji came along I realize I had an opportunity to make a living doing something that could actually benefit people and bring enjoyment to their lives.

I believe that food is medicine and remains our primary means of maintaining our health. I support organic food production because it’s good for Nature AND us.

I want Chicaoji to support local production of apples (for a great variety of products, one of them being vinegar for Chicaoji), goji berries, and sea salt.

I want Chicaoji to support organic food production in other places such as cacao in Ecuador and goji berries in China.

I want to help people enjoy life by providing a delicious complement to anything they eat.
