History
Established in 2009.
Umami Restaurant Group is a Los Angeles-based restaurant group founded by Adam Fleischman, a self-taught chef and successful food and wine entrepreneur best known for his revolutionary burger concept, Umami Burger. Conceived as «fine-dining fast food,» Umami Burger was named «Burger of the Year» by GQ magazine. Umami Burger’s first location opened on La Brea Avenue in Los Angeles in February 2009.

It all started in 2009 when our founder, Adam Fleischman, was pondering one of life’s great mysteries: why do people crave burgers and pizza more than other types of food?
As an avid home cook and experienced wine professional, Adam knew a thing or two about food science. He hyposized that the ‘craveability’ of certain foods was the result of how umami-rich they were (like sweet, salty, sour, and bitter, umami is an ingredient-activated taste sensation; it is often referred to as the fifth taste and described with words like savory, meaty, and amplified).
Adam went to work designing a burger that maximized umami flavor. Every ingredient in his original umami burger was purposefully selected to amplify umami — from the 20 year aged pamesan frico to the roasted tomato and shiitake mushroom (both serious umami flavor bombs).
Today, we remain dedicated to Adam’s original goal of unlocking umami flavor and delivering that perfect mouthful, with every burger, every time.
