Specialties
We believe in taking the long road and that there are no shortcuts to delicious food. Our pizza is modeled after the Neapolitan style. We use the highest quality Caputo 00 flour, sourdough starter and we «proof» our dough for 18 hours. Each pizza is made to order and is cooked in our 900 degree wood burning oven. Oak and cherry wood are typically used in the oven. Our fresh pasta program also focuses on using Caputo 00 flour from Italy, fresh farm eggs and other quality sourced ingredients.
History
Established in 2014.
PROOF Pizza & Pasta is a labor of love, created by chefs Justin Flit and Matt DePante. We are a neighborhood, casual restaurant serving Neapolitan style pizza and fresh homemade pasta. Our Wine and Beer program celebrates affordable yet delicious selections from Italy and The United States.
Flit and DePante met at The French Culinary Institute in New York City. After working in the kitchens of DBGB and Gramercy Tavern, both returned home to Miami to work for Bourbon Steak and The Dutch. While most recently working together at Jazziz in Boca Raton, the two realized it was time to step out and chart their own course. Thus, PROOF was created!
