History

Established in 1976.

Stephen «Saz» Sazama began Saz’s State House in 1976. Formerly a bartender at another Milwaukee institution, Major Goolsby’s, Saz found his nitch with his signature gluten-​free barbecue sauce. Paired with his favorite St. Louis-​style Baby Back Ribs, Saz was in business. Saz was also a Milwaukee food pioneer with his festival friendly Mozzarella Marinara and Sour Cream and Chive Fries which are staple menu items at Summerfest (Guinness Book of World Records title holder for World’s Largest Music Festival) and the Wisconsin State Fair. In 1985, Saz decided to take his show on the road and opened Saz’s Catering, Inc. Although at this time Saz’s Catering was a seasonal business (Summer Picnics and Tailgate events) it has since become a full time /​full service event planning and catering company. With an unbridled passion for food and hospitality, Joe weaves this approach through all aspects of Saz’s. Intricately-​planned menus, fine china and flatware lovingly positioned just so, and an ambiance to rival Norman Rockwell’s finest portraits nurtured what would become not only a keen eye for the details that live on in memories, but also a genuine enthusiasm for the client experience. At the age of 14, Joe made his first foray into hospitality as an employee rather than a guest and participant, and he’s been striving toward perfection ever since. Joe believes that, while great food is a wonderful starting point for any gathering, a successful event delivers infinitely more. Whether you’re planning a custom-​themed gala for 400, a company picnic for 10,000, or an office luncheon for 40, you’re in great hands.
