Chago’s passion for creating the best «Torta Ahogada» in the world began in 1985 in «Guadalajara, Mexico». He mastered the process of baking the «birote salado“which is the key element to making a great #TortaAhogada. The «birote salado» which is a sourdough bread has to be uniquely baked at a specific temperature inside of a «stone oven» and by a baker when understands the process of handling this type of bread. He combined the secret salsa recipes which he later altered to make them his own which thus the great «Chago Tortas Ahogadas» were born.

His commitment to keeping the recipes to their most autenthic flavor is what makes his «tortas ahogadas» the most flavorful tortas anywhere. The smiley yellow face has become his signature icon which is now famous in Guadalajara and LA.
