Specialties

Bistro Des Copains features the ingredients of Provence France cooked classic bistro style. The food of Provence is inspired by the earthy local flavors found throughout the region. In the summer, the dishes reflect the wide variety of fresh fruits and vegetables found in the local farmers markets. In winter the dishes, while still varied, are heartwarming and robust to ward off the cold winds of the Mistral. But no matter the season, cuisine Provencal delights the palate and satisfies the soul.

History

Established in 2006.

Michel Augsburger and Cluney Stagg have more than 25 collective years of hospitality experience working with the senior population in Sonoma County, throughout California, and the continental United States. The two entrepreneurs have been friends since college, traveled extensively throughout France, and have spent the last 12 years working together. Each has a love of cooking and creating dishes that satisfy the palette and warm the soul. Michel’s passion for France is based on his own French heritage and his many visits over the years to his family’s ancestral farm located in the south of France and his own 17th century village house in the medieval village of Sablet in Provence. Note the family photographs of the farm hanging on the walls when you visit.

Business Owner

We live in Sonoma County California north of San Francisco. I am CEO of Chancellor Health Care, a company which operates senior living communities. My wife is a registered nurse and works on a neurology unit in a local hospital. I am a foodie and wino and love to cook and entertain. My family is from the South of France and my wife and I own a stone village house in Provence France. This led after many years of talking about it to opening Bistro Des Copains. We have two married daughters who have given us three wonderful grand children. Our only «child» at home is our very large but sweet Newfoundland. My partner in the Bistro is my good friend and fellow foodie from college and the CFO of Chancellor Health Care.
