Enjoy the Santa Fe Aesthetic; Our (5) individual casitas are carved into the mountaintop, and elegantly designed in a Pueblo style. The original designs were inspired from the Taos Pueblo Native American reservation in NM. Each Casita is in the adobe style architecture, and every room offers panoramic views of our vineyards, orchards, and the surrounding canyon of the Santa Lucia Mountains.

Wild Coyote Winery is a family owned & operation since 1995, a part of the first 20 wineries in the region. Located on the West side of Paso in the newly designated AVA of Adelaida District.
We are known as the House-Of-Reds (big, bold, unfiltered) old-school wine-making. Limited estate grown, dry farmed & one of the very few 100% pure varietal producer of; Zinfandel, Merlot, Syrah, Malbec, Mourvedre, Tannat, Tempranillo, Rose’-of-Syrah, and Zinfandel Port.

Business Owner
Gianni Manucci grew up in Santa Cruz (CA), and in his first life, owned his own architectural practice for over twenty years. But, his true roots in grape farming began in Europe over several generations ago which inspired him to get back to his roots «his second life» in 1995. His hands-on personal skills shine in this landmark 40-acre terraced hillside vineyard, and his UC-Davis Oenology education has gained him many enthusiasts among his club members. Gianni & Kati (his wife), have a unique sense of balance that has transformed their vineyard into a Pueblo village with ancient adobe style architecture, an art colony, retreat, and winemaking, all harmoniously create a balance at their winery.
