History

Established in 2015.

The name Paiche comes from the beautiful and giant Amazonian fish who grows up to 400 pounds and is playfully considered to be the «King of the Amazon.» Based on a bold and sometimes rebellious spirit «Paiche» became the childhood nickname of Chef Jose Luis de Cossio.

Originally from the coastal capital city of Lima Peru, Chef Jose Luis has lived a life of fanatical dedication to two main things: an enduring love and respect for the ocean and an unyielding devotion to food prepared and served with dignity. AKA: SURFING and COOKING.

Jose Luis’s career lead him from Executive Chef of Gaston Acurio’s «La Mar» Restaurant in Lima to various roles in Portland’s food scene. It’s here that he gained an attentiveness to mindfully grown, raised, and harvested seasonal ingredients. These days, Chef Jose Luis expresses his bold spirit by either serving Peruvian inspired northwest cuisine in a friendly and inviting, and intimate setting at Paiche. Or surfing!
