Awesome snack on the way to the eastern promenade. For 4 bucks, you can get a gooey and toasted homemade smore. Got the coconut one. I wasn’t blown away, mainly because it seems like something I could do myself at home, but it still did not disappoint on the sweet tooth front.

When I lived in the Canary Islands of Spain I had a few guilty pleasures: topless beaches, red wine that cost less than € 1, and gofres. Gofres are these smaller, sweeter, denser waffles that taste delicious with either a drizzle of caramel OR a drizzle of vanilla icing(like what you get on top of cinnamon rolls). I had gofres every day walking to Parque Marítimo. I haven’t had ANYTHING like it since coming back to the States, and that’s been over a decade now. Segue… The Marshmallow Cart is just fun. Good, old fashioned, fun. It’s good for kids. It’s good for drunken twenty-somethings outside of Fore Street bars. It’s good for tourists. It’s good for those of us with a sweet tooth who need a fix but don’t want to spend a lot of money. And it’s good for those of us who like the idea of s’mores, but maybe don’t want to purchase all the ingredients to make them ourselves, because… let’s face it… there’s always half a box of graham crackers leftover(and seriously, what does anyone ever do with those?). It’s run by a staff of fun-loving folks. And they’ve got fire. So, basically, it appeals perfectly to most people’s inner child. There’s only two things that prevent me from giving The Marshmallow Cart full marks: 1. Marshmallows are typically made with gelatin. Gelatin is typically made from animal by-products(think bones, skin, and tendons). I don’t know(but would update this in a heartbeat if I did) if The Marshmallow Cart makes their marshmallow’s with gelatin or if they’re vegetarian-friendly and use guar gum, agar agar, or pectin. That being said, as a vegetarian, I’m not exactly rushing to get back here for this particular product. 2. THEWAFFLESAREDELICIOUS. They sooooooo remind me of my Spanish gofres, but… The Marshmallow Cart doesn’t have icing for them. I think the only options are marshmallow or nutella. Allow me a Veruca Salt moment, if you will: I WANTICING. AND I WANTITNOW. I would come out of my way for this if it was available. Maybe I should just start carrying my own bottle of it around in my purse? The point… if you like marshmallows(and don’t have a plant-based diet), s’mores, waffles(sans icing), fire, and smiling… The Marshmallow Cart will not disappoint.

Considering Portland has some amazing food, and food trucks, I’m surprised someone didn’t think of this sooner. The Marshmallow Cart is every dessert lover’s dream, especially if you like things prepared right in front of you. Waffles, Rice Krispy Treats, Nutella… the list goes on and on for what you can get here. Be prepared for it to be a little bit sticky, but oh so yummy. I recommend: the waffle on a stick. I got mine with a vanilla marshmallow(homemade of course and perfectly golden brown and ooey gooey to boot) and Nutella. Try it for yourself if you don’t believe me. Or just try it in general, because it’s good, and just right for warm summer nights.

I love the idea of a marshmallow cart! There is a selection of marshmallow flavors, belgian waffles(+toppings), smores, AND all of this comes toasted to your liking. I’m not certain if the marshmallow flavors rotate, but I highly recommend the coconut! The maple comes in a close second. Next time I want to get a s’mores with one coconut and one maple marshmallow. The prices are reasonable and the service is friendly. It’s a relatively new truck/cart so the lines weren’t long so go over and try it before everyone else does! I can’t wait to go back to try all the marshmallow-themed treats(though I’m certain the s’mores will be my favorite). Be sure to check the website to know where they’ll be!
