History
Established in 1977.
The String Bean was opened in 1977 in a remodeled old Alfie’s Fish and Chips building on Spring Valley just west of Central Expressway by a man named Charles Fowler. The current owners, Joe Gibson and Debbi McSwain, bought it February of 1980. It stayed at that location until 1982 and moved to the building next door to it when Pizza Junction closed down. This one looked a lot like an old house. The move from that location in 1995 was precipitated by the imminent demolition of Keystone Park shopping center, the official name of where the restaurant was located. Having but 6 months to relocate, a site was found in the northwest corner of Spring Valley and Coit Road in Sunnyland shopping center. Success has been enjoyed in this location going on the 15th year. During this time we had a manager by the name of Ron Morse who worked for us for 23 years and, tragically, died in a car crash on July 1, 2007. He will be missed forever.

Created and opened Piaf’s restaurant and bar in Highland Park in 1979 with then boyfriend, Joe Gibson.
Bought The String Bean in 1980 with Joe.
Married Joe Gibson 2÷14÷81.
Three children: Austin, Tammy and Dakota.
One grandchild: Madison Grace
Joe is Vice President of Marketing for USFoodservice here in Dallas.
