History

Established in 1983.

The Copper Dome has been a St. Paul landmark for over 30 years and Tom has rejuvenated the space, updated the menu, and has made «The Randolph Griddle» the go-​to restaurant for breakfast and lunch in St. Paul. On a personal note: Tom and Sheila Maley Casper have been married 39 years and have 8 children and 9 grandchildren (so far). They have made their home in the Macalester Groveland neighborhood of St. Paul for 34 years.

In 1971, Tom Casper went to work for his father, Bob Casper Sr. at the Cherokee Sirloin Room in West St. Paul. It was the beginning of a career that has now spanned 43 years. After Tom graduated from the College of St. Thomas, he became a certified chef in 1976. He has used this training and expertise throughout his career to create & develop menus. Tom sold his share in Cherokee Sirloin Room in West St. Paul & Eagan to his brothers after 25 years. He then purchased Ciatti’s Italian Restaurant in Woodbury. Also at this time, Tom & Sheila & their friends Pete & Jan Runyon purchased the Nook in St. Paul and turned it over to their sons Ted Casper and Mike Runyon. After 8 years, the landlord at Ciatti’s bought Tom out of his lease so that he could develop the Woodbury property, and Tom moved on. His next project was to assist Ted & Mike with their new restaurant, Shamrock’s on W. 7th and after 8 years, Tom decided to purchase the Copper Dome from former owner, Fred Foley.
