History
Established in 2013.
Red Cow was started by local restaurateur Luke Shimp. Red Cow is Luke’s version of a sophisticated 21st Century tavern, featuring award winning gourmet burgers, shareable appetizers, sandwiches, salads and a couple entrees.
Craft Beer, Fine Wine and Classic Cocktails round out the beverage program.

Business Owner
Luke spent six seasons in NASCAR with Roush-Fenway Racing and Joe Gibbs Racing prior to becoming a restaurateur.
In 2002, Luke bought an interest in Blue Plate Restaurant Company. After having built BPRC to seven restaurants and 12 years of ownership, Luke sold back to his partners and started Red Cow.
Red Cow’s first location is in 50th & France area of South Minneapolis & Edina, opened February 2013. The second location in St Paul’s Cathedral Hill opened June 2014. A third will debut in Minneapolis’s North Loop February 2015.
